Stromboli

Stronboli is why I wanted an easy pizza dough recipe. A stromboli is basically a rectangular pizza folded over itself a couple of times. Below is how I made mine on Sunday, but just like a pizze, use what ever sounds good to you. I used my red sauce, but made it thicker and more herby.

Stromboli

Ingredients:

  • Easy Pizza Dough
  • Red Sauce, divided
  • 8 ounces your favorite pizza cheese, grated
  • 1/2 yellow onion, small dice
  • 1/2 green pepper, small dice
  • 12 thin slices Buon Gusto Salami
  • 1 whole egg
  • 1 Tbsp water
  • 1/4 cup freshly grated Parmesan Cheese

Instructions:

  1. Preheat your oven to 500 degrees.
  2. Line a rimmed sheet pan with parchment paper.
  3. On a lightly floured surface roll the dough out to a large rectangle.
  4. Spoon on 8 tablespoons of pizza sauce on the dough.
  5. Spread it over 3/4 of the pizza dough.
  6. Leave a 1/2 inch border on three sides and a 2 inch border on the longer side.
  7. Sprinkle with half of the grated mozzarella.
  8. Top with the onion, green pepper, and salami.
  9. Sprinkle with the remaining cheese.
  10. In a small bowl whisk together the egg and water.
  11. Brush the edges with the egg wash.
  12. Fold over the three half inch sides and using the parchment paper, roll the dough 1/3 of the way.
  13. Grab the other side of the parchment, the side with the 2 inch border, and fold it over the rest of the way.
  14. Position the stromboli in the center of the pan, seam-side down.
  15. Brush the entire thing with egg wash and make diagonal slits for venting.
  16. Sprinkle with Parmesan cheese and bake for 10 minutes.
  17. Reduce the temperature to 375 degrees and continue to bake for 15 minutes more.
  18. Remove and allow the stromboli to cool for 5 minutes.
  19. Slice into one inch strips.
  20. Serve alongside the remaining warm pizza sauce for dunking.

Easy Pizza Dough

I have been looking for the right recipe for easy pizza dough. On that does not require a long time to rise. One that rises in less than an hour while I am making the pizza sauce, cutting up toppings, and stuff like that. I thought this recipe would take at least an hour, but it was really ready to go in 45 minutes. Next time, I might even try it even earlier. Anyway, I was looking for something quick in which to make a stromboli, and this worked perfectly. I will try it with pizza next. In the meantime, enjoy! Oh, and the stromboli recipe I will post tomorrow.

Easy Pizza Dough

Ingredients:

  • 1 tsp honey
  • 1 cup warm water (120 degrees)
  • 1 packet active dry yeast
  • 1 tsp olive oil, plus more for oiling the bowl
  • 1 tsp salt
  • 2 ½ cups all purpose flour, plus more for working dough

Instructions:

  1. In the bowl of the mixer add the teaspoon of honey.
  2. Pour in 1 cup of warm water and whisk.
  3. Sprinkle in the packet of yeast and let it sit and get all puffy.
  4. Pour in olive oil, salt, and a cup of the flour.
  5. Mix adding the rest of the flour gradually.
  6. Keep mixing until the dough pulls easily from the sides of the bowl.
  7. Add more flour if necessary {a couple tablespoons at a time}.
  8. Add a splash of olive oil to a large, clean bowl.
  9. Form the dough into a ball and place it into the bowl.
  10. Toss the dough ball around and up the sides of the bowl to coat.
  11. Cover with a towel and let the dough rise for an hour or until doubled in size.
  12. Once the dough has risen, punch the dough down until deflated.
  13. Lightly flour a work surface and the dough ball.
  14. Reshape it into a ball.
  15. Using your fingers press the dough out to your desired size and shape.

Chicken Apple Walnut Salad

Our son left for Italy yesterday for a school trip, volunteering for an archaeological dig for his Latin class, and I am cooking for only two. I really need to get used to that as he heads off for college next year. I completely failed and did not have anything planned. I stopped at the store and grabbed a roasted chicken with plans to make a quick salad. Below are the results.

Chicken Apple Walnut Salad

Ingredients:

Instructions:

  1. Combine all ingredients in large bowl.
  2. Toss with dressing.
  3. Halve onto two plates.
  4. Serve with crusty bread.

Chicken Mascarpone Primavera

With all the fresh summer vegetables, I need to keep finding ways to use them. If you are in a hurry, you can always stop and buy a rotisserie chicken from the store. Use whatever vegetables look good to you. This dish is easily customizable. Serve with a nice salad too.

Chicken Mascarpone Primavera

Ingredients:

  • 1 pound penne rigate
  • 1 cup mascarpone cheese
  • 4 Tbsp sherry vinegar
  • 1 Tbsp extra virgin olive oil
  • 1/2 pound green beans, cut into 1 inch lengths and blanched until al dente
  • 1 zucchini, thinly sliced into rounds
  • 1 yellow squash, thinly sliced into rounds
  • 2 shallots, thinly sliced
  • 1 pound boneless chicken breast, grilled and diced or shredded.
  • 1/4 tsp crushed red pepper
  • Salt and fresh ground black pepper
  • 4 tablespoons minced fresh basil
  • Fresh shredded parmesan cheese
  • Balsamic vinegar

Instructions:

  1. In a large pot of boiling salted water, cook the penne until al dente.
  2. Drain the pasta, reserving about 1/2 cup of the cooking liquid.
  3. Meanwhile, in a small saucepan, combine the mascarpone and sherry vinegar.
  4. Cook over low heat until melted; keep warm.
  5. Heat the olive oil in a large skillet.
  6. Add the green beans,zucchini, yellow squash, and shallots.
  7. Sauté until tender and lightly browned.
  8. Add the chicken, crushed red pepper, salt, and pepper to taste.
  9. Cook just until warmed through.
  10. In a large bowl, toss the pasta with the skillet contents and the mascarpone sauce.
  11. Add some of the reserved cooking liquid if the pasta seems dry.
  12. Sprinkle with the basil and spoon onto plates.
  13. Sprinkle with parmesan cheese.
  14. Drizzle with balsamic vinegar.

Lime Avocado Butter

This stuff is absolutely addictive! I put this on some grilled corn, but I am drooling over other things this would good with melting all over its top. Shrimp, fish, vegetables, I could go on and on, but I am making myself hungry. Do yourself  favor and make this!

Lime Avocado Butter

Ingredients:

  • 1 stick salted butter, softened
  • 1 ripe avocado, sco0ped and mashed
  • 1 lime, zested and juiced

Directions:

  1. Put all ingredients in a large bowl.
  2. Mash and stir vigorously until well combined.
  3. Place on a large sheet of plastic wrap in a long shape.
  4. Roll plastic wrap over butter.
  5. Twist ends tightly to make a log.
  6. Place in freezer until hardened.
  7. Slice and enjoy!
